Crockpot roasted chicken with vegetables and truffle oil
This is a quick and healthy dinner I put together this afternoon.
1 whole chicken, insides removed
1 pack baby carrots
2 cups broccoli
1 cup sweet tomatoes
season bird well with olive oil, salt and pepper
1 1/2 T garlic powder
1 T onion powder
1/2 t Italian Seasoning
1/2 t red pepper flakes
truffle oil (or oil infused with truffle oil, which is what mine is)
Spray crockpot, add chicken and season well. Add vegetables and continue seasoning as desired. Drizzle with truffle oil. Cook on low 4 - 6 hours. Once chicken and vegetables are cooked, remove from crockpot and make a light white wine gravy with remaining pan juices if desired.
