Oh So Close!

Our house is nearly complete! Check out the latest pictures; we have plants, a driveway and closets!!! First picture together in our new house! Natalie Rigg, this picture is all for you! Skinny & Delicious Margaritas

Guilt Free Margarita Margaritas sure are good from time to time, but who wants all those calories? We were set to enjoy our awesome imported spread from the Texas Tamale Company, but wanted our calories in wholesome food goodness and not sugary margaritas. After looking at the humorous serving size of Skinny Girl Margaritas (1. 5 oz, yes that is correct there is a point between the one and five!), we knew a better version could be mastered at the Ford house! Round one went fairly well, and with a few small adjustments a grand, low calorie, FULL glass has nearly 100 calories less than Skinny Girl Margaritas, and between 300 & 400 less than your traditional margaritas!!! Note, the above picture was the "test run" batch which wasn't as thick. I might add a dash of food coloring next time to make it look more margaritaesque! "Jambalaya" Vegetable Soup

I gave this soup the name "Jambalaya" Vegetable soup as I took a lot of the inspiration from making Jambalaya in the past. This is a healthy , vegetarian version, but with all the flavor ! I wanted a soup that would be packed with vegetables and some carbs, to go along side the chicken I was serving. Ingredients: 2 -14 oz cans Diced Tomatoes (with or without added peppers/ onions /etc) 1 bag frozen cut Carrots ½ bag frozen Okra 1 Yellow Squash, seeds removed & cut into bite size pieces 1 medium Yellow Onion, chopped 6 cloves Garlic, pressed or chopped 6 cups water / Vegetable Broth* 1 diced Red Pepper 2-3 stalks sliced/ chopped Celery 1 cup Brown Rice 2 T Extra Virgin Olive Oil 2 T Butter 1 t Thyme 1 T Smoked Paprika ¼ t or less of Cayenne Pepper Heat large pan on medium-low heat, add olive oil and butter. Easter Dishes

These are two of my favorites, layered salad and cherry fluff, as I call it. The layered salad is an old recipe  my mom has had for years and the cherry fluff is adapted from the Paula Deen recipe for Banana Split Salad...hence the name change, we do not use bananas. Cherry Fluff 1 (14 oz.) can sweetened condensed milk 1 (12 oz.) container frozen whipped topping, thawed 1 (21 oz.) can cherry pie filling 1 (8 oz.) can crushed pineapple, drained ½ c. chopped pecans ½ c. shredded coconut 1 c. fresh sliced strawberries Garnish: chopped pecans, coconut, sliced strawberries In a large bowl, combine milk and whipped topping until well blended. Fold in next 5 ingredients and chill until ready to serve. Garnish with pecans, coconut and strawberry, if desired. It's only been two weeks since the last time we checked out the house progress, and man they sure are making progress!
